I used to do Step-Ups and they work well, painful though and can be dodgy on the knees when you fatigue.

Reverse lunges (possibly with front foot on step).
Step ups.
Bulgarian split squats (again, front foot can be elevated).

That's all I can come up with right now. :)

Peterson Step Ups although technically not Plyo.

You can do a form of side step onto and then off a platform that will one side and then the other. To try and explain; if you're standing to the left of a step or platform you first side step with your right leg onto the platform. as you make contact you then bring across the left leg also onto the platform while simultaneously the right leg side steps in the same direction off the platform and onto the floor. This is almost like a skipping motion but side ways. THe left leg then follows the right off the platform and you start over from the new position on the other side of the platform from where you started. Speed and co-ordination are key.

^^ and leg behind, but in a more squat position than deadlift/RDL.

Also, to be a real picky cnut, Single Leg exercises refer to only one leg working, such as single leg squat etc. You really mean Unilateral leg work.

I'll leave now before I'm kicked & pushed out :P

Alternating stepup jumps.
Bulgarian split squat jumps.
One-legged box jumps.

Also some of the resistance band exercises in that video I linked you to... :)

Single-leg RDLs are a favourite of mine, you can mix and match between DB on same side/opposite side/barbell.
