Simple Dressing For Fish And Poultry

Just been messing about with some healthy ideas and found this works well.

You need:

1 Lemon
Good quality Olive Oil
1 Sprig fresh Mint
1 sprig fresh Oregano
1 Fresh Chilli
3 Cloves Garlic
Salt
Pepper

To make:

Squeeze up the Lemon and then add in about 3 times the volume of Olive Oil which is roughly 100ml-125ml depending on the size of lemon. This may seem like alot of Oil but this will go along way.

Roughly chop the Mint and Oregano and add. You can use dried Oregano as fresh can be hard to find and roughly use the same amount as the Mint.

Halve and de-seed the Chilli and finely chop. Use between 1/2 and 1 whole Chilli depending on your taste.

Slice and add the Garlic Cloves.

Season to taste with the Salt and Pepper.

Mix well and use a teaspoon to dress your Fish or Poultry. Around 4-5 teaspoons per portion should be enough.

Do you use it as a marinade or just put some over the meat after cooking?

Just pour after cooking. You could use it as a marinade for roasting and maybe grilling but I don't think it would work if you pan fried.

I used Nandos a fair bit but this is miles better for flavour plus all natural ingredients.

It does look nice - what olive oil do you use? I don't think my one is that great a quality.
