Rice pudding goodness

You will need.....

  • 25 grams of shortgrain/risotto rice
  • half a pint of Almond milk. (297 mlitres)
  • One teaspoon of coconut oil.
  • One level table spoon of diabetic sugar, Xlobrit
Grease the bowl with the coconut oil.
Place all the ingredients into it and give it a quick stir.
Place in pre-heated oven on gas mark 3 for two hours,
stir after the first half hour, then replace in oven and leave to cook.

Tastes very sweet, but only contains about 42-45 grams of carbohydrates.

If you can't find unsweetened almond milk, it's really easy to make:

200g ground almonds
500ml boiling water

Combine the almonds and boiling water and allow to steep for five minutes, stirring occasionally. You can then either sieve the mixture to remove any coarse grains or you can blend the mixture until smooth in a blender (this is the preferred option).

mmm sounds lovely and very easy.

You could use Stevia instead of Xylitol if you can find it (I've got some; it's not bad).

For home-made almond milk I suggest soaking the almonds overnight to neutralise the anti-nutrients in them and also to sprout them (slightly); thereby increasing their nutritional value. Then blend the almonds with some fresh water. Strain and repeat. Keep the almond meal to add to porridge etc.

Why would it be confiscated from overseas? Are you thinking because it's classed as food stuff? Pretty cheap from the link but wonder what % extract it is.

Palatinose isn't a sweetner though.

for sweetners then stevia & xylitol are regarded as the best two. Unprocessed stevia is green and does have a unique taste, even though it is sweet; kinda mint'ish. I don't mind it.

Replace the almond milk with gold top super full fat, the coconut oil with butter and the splenda with proper sugar and i wuite like the sound of that :lol:

^^ in seriousness, the creaminess of that would be awesome. But surprisingly if you get an non-dairy based rice pudding (or porridge) made right, it's lovely; honest.

Defo. you could even just use normal blue cap milk and trow in a splash of double cream, extra thick would be best.

Shit. The weekend is over and im back to strict. im gonna have to wait till next weekend till im aloud that!!! :cursing:

Rab, seriously this rice pudding is gorgeous! If you want more fat to it, try it with coconut milk, but I'm converted to almond milk...even if I have to make it myself.

I HIGHLY recommend Palatinose... Craig got me using it and it's just fabulous stuff.

Sounds nice, but very expensive with the 200g almonds i'd imagine.

I couldn't have it anyway, i've discovered the only way to keep my sweet tooth at bay is to totally give up sweet tasting food, even if it is healthy! :)

I use it as my carb source during swim training. Sits easy on the stomach and gives me what I need for getting through the really tough sets. Plus with the increase of hours in the pool to 10.5 a week I have noticed that it helps me keep on top of my glycogen levels i.e. they aren't getting depleted and leaving me crashing during a session. I know that's not all down to the palatinose because obviously diet outside of training has the most impact, but I tried leaving the palatinose out and increasing carb intake at other times and it just wasn't as good (for me).
