Celiac Disease - help and info needed

I know there are a couple of people on ESN with great knowledge about gluten issues, and I could really do with some advice and help on this.

Just found out that my girlfriends niece, who has a range of medical issues including severe type II and type I diabetes, has now been been diagnosed with celiac disease/gluten intolerance and has been pretty bad with it recently. She also suffers a range of other medical issues, but these don't really affect her diet.

Would really appreciate any advice from the collective minds on here for construction of a good diet that, and/or some links to good information that I can pass on and help them sort out. The young lady in question is a lovely girl and with all her medical issues she's really going through it, so if at all possible want to try to limit the impact of her gluten issues and find a diet that's manageable.

First off if in doubt don't eat it and always carry gluten free stuff in cars she uses.

Just because you can not see any wheat containing components in the ingredents, don't think it is safe, it may well be cross contaminated eg. snikers bars or mcdonalds frys.

Its also in unexpected stuff like oxo cubes............. use knor, to deal with this stuff you can order a list of all gluten free own label products by emailing asda and waitrose, tescos and morissons are tossers and offer no such choice.

Carbs:

Out of the gluten free breads only genius is worth while, I react to the perscribed stuff, pretty sure its contaminated.

The best gluten free pasta is Adsa's by far.
oats need to be specific gluten free ones available at tesco, waitrose and sainsburys.

Chocolate:

Galaxy milk chocolate, peanut MnM's, bounties.

The celiac society do a whole list, you get a free log in from the GP, never checked it personally as I seem to react to more than just gluten, hence I just eat foods I'm good with.

Maybe give me a clue tell me what she likes to eat and I can give a close alternative?

with regards to gluten free pasta, go for buckwheat (nothing to do with wheat, just has wheat in the name :roll: ) & rice ones. Avoid corn and maize; not healthy grains at all and imo the pasta tastes like shit. You can get noodles that are gluten free made from sweet potato & rice, buckwheat & rice; taste real good.
