My Ultimate Burger Recipe

Finally settled on this recipe which is great for the BBQ.

You need:

Steak Mince
Worcester Sauce
Whole Grain Mustard
Crushed Dried Chillies
Oregano
Rosemary
Garlic
Pepper

You create:

Add Worcester Sauce and Mustard to the mince and mix in vigorously so that the mince breaks down into a paste like consistancy. This will not only help bind the meat but will also give a great texture which helps with taste. I don't use exact measurements but for 500g mince use a generous splash of Worcester Sauce and around a tablespoon Mustard.

Once you've mixed to a paste like consistancy add all the other ingredients in amounts to taste but at a guess I use a teaspoon of chillies and pepper, 4 cloves of garlic and a tablespoon of the others. For the garlic grate the cloves rather than chop or you can use a garlic paste instead.

This lot should make 4 reasonable sized burgers.

I didn't think I could possibly get hungry for a burger at 5.20 in the morning but you've managed it Alex! Yum yum!

I always find just using mince that the burgers break up so I usually mix in a bit of egg yolk to help bind the mixture when it cooks :)

They usually break up from not being mixed enough as there shouldn't be any small lines or balls of mince, purely a paste like texture and consistancy. This way you don't need a binding agent. Crap mince is also a culprit of break up.
