Would very much appreciate any tips and info on Lunges as it's one exercise I've never got on well with but really want to use. What's the benefits of using DB's or BB's?

Is it safer to just set-up with one foot forward and then rep out on that leg then switch? Or keep resetting and alternating legs?? Walking Lunges???

I worry about my knee's and soon as I try to push on with weight they start to complain.

Pretty much spot on. DB's are probably a safer bet on your knees as it's easier to balance.

Staying on the same leg is more Split Squat but the movement is more diagonal than straight up and down.

I know there are a few ways to do lunges but the only two variations i like are forward and reverse lunges with DB's. I tend to do the forward ones as walking lunges, and the reverse ones by stepping back to the start position at the conclusion of each rep. Don't think lunges are an exercise to go heavy on either and, imo, are best as a painful leg pumping finisher.

I love all varieties of lunges. BB and DB, I have no real preference and like both. However people lacking confidence, or starting out, should use DB as you can dump them if it goes Pete tong.

Anyone with balance issues might well find backwards lunges easier to start with.

I personally prefer to alternate on every rep as it induces fatigue equally.

I also recommend using lines on the floor to get the perfect step distance on each rep. It's easy to become inconsistent near the end of a set if you are not careful.

If you have dodgy knees then maybe don't have the knee go past the toes, but if you are healthy then drive them forward. The whole knee over the toes being bad thing is a load of shite imo... unless you have bad knees, but then I wouldn't do lunges anyway.

Does anyone ever do side lunges?

They look like they'd actually work the adductors harder than the glutes?
