So this week i have been experimenting with lower carbs from clean sources, basmati rice (1/4 cup serving), baked spuds(half a baked spud at a time).

I have 2 problems

1) I cook my rice at night and its all good but i come to eat it the next day and its all hard any tips?

2)I ma bit grumpy well im mega grumpy and its not fair on the girl :shock: Im sure i will adjust

white rice & white potatoes are still rather high in the glycemic index front. try brown rice & sweet potato

don't cook the rice for too long. Linda like pasta being a la dente, then I take the rice off the boil when it's just ok to eat (although still a wee bit hard). Then drain and pour over boiling water to remove excess starch. Seems to be ok for me.

One little thing I often do is to add just browned desiccated coconut that I've lightly browned mmmm
Then add the rice into the saucepan with the coconut and mix. The next day the rice is always fine for me.

Cannae help with the other problem dude... you'll have to figure that bigger issue out for yourself ;)
