Omelette is a tricky one. tbh I still don't know. My thoughts are that if the eats are gently stirred so that the egg yolk is just brokjen and there's still egg white clearly visible (not the mornal yellow mixture you get), then it'll be better. And also when you make an omelette you don't keep moving it around like you do with scrambling.
tbh best is poached, soft boiled and fried is fine; in fact just had 2 eggs (from my own chickens) fried. Fired in coconut oil (as per KP's recommendation) is great. Organic unsalted butter is fine too.
