hELP WITH RICE

Postby SCOTT GALTON on Mon Mar 24, 2008 8:47 pm

I have a small rice dilema. I cook my rice the night before and its great all cooked an soft and looking like rice should. Then i let it cool and pop it in 2 tubs and shove it in the fridge overnight. The next day its all crispy! What is a boy to do to keep it nice?
I use basmati rice as i just cant eat brown rice it gives me terrible stomach probs. Basmati is medium gi and i eat it with chicken so this is my rice of choice.

as its starchy theres not much you can do, as far as I know?

I do know that you can put it in water (hot) for a few minutes and then strain, drain and eat it.

Unless anyone else has any tricks?

crispy? wtf are you doing to it? lol I used basmati rice and mine is fine the next day. I dont let mine cool down before it goes in fridge though, I think then the steam may be keeping it moist?

You gotta let it cool down before it goes in the fridge, improper cooling and storage of rice is (according to muscle&fitness)the second biggest cause of food poisoning after chicken(salmonella).Dunno if this is true though mate.

I leave mine out for a good couple of hours before going in the fridge and it's fine next day.

Have you tried wholegrain as opposed to brown?

Much better to eat and actually has more fibre.

Tastes better than brown. Is my main carb source.

Scott, buy a microwave rice cooker.

Is how I cook my rice rather than using a pan and boiling.

So easy mate. Pour boiling water and rice in the thing and zap it for 10-15mins.

Get rid of the ecess starch by rinsing it through with boiling water after cooking, then put it into sealed container whilst it's still steaming with tiny amount of dripping water, this will keep it moist. let it cool naturally then place in fridge to avoid food poisoning. (|as Jake said, just behind chicken in the risky stakes! that and potatoes is the only thing I have to worry about when it comes to food poisoning!)
