Help with Lentils & Beans

Trying to make a few little improvements to diet and add some variety

Looking for some tips on how i can introduce lots more lentils and beans for instance. Bought a bag of lentils and adzuku beans the other day and all i need to know now is what the hell to do with them LOL

Would be good to increase the amount of protein and carbs im consuming from sources such as this i recon

get a vegetarian cookbook - Normally lots of lentil/bean recipes in those!

My favourites were always lentil bakes, lentil soups & lentil curries

Look on BBC website : http://www.bbc.co.uk/food/recipes/ and type in lentils - Quite a few come up

Check out Jamie's Kitchen on the Channel 4 web site as well. He did an excellent Italian recipe with Beans last week that looked superb.

This sounds good

Adzuki Multi Grain Mix Stew


Ingredients:

Equal quantity of the following:


Adzuki beans
Mung beans
Brown Rice
Quinoa
Millet
Black Eye Beans
Preparation (the evening before):

Put all ingredients in a saucepan.
Cover well with water, bring to a boil and let simmer for a while.
Turn off heat and let soak over night.
Preparation (the morning after):

Bring to the boil again and fill into a foodflask to take to work.
Enjoy for lunch or throughout the day whenever hungry.



I would add some shoulder stewing steak and some garlic though i recon :lol:

I like green lentils done really simply. Cook the lentils and put to one side. Gently soften some onions, peppers, a little bit of chilli. Then add the lentils and heat through, adding plenty of olive oil. At the end stir in lots of fresh herbs et voila! Yummy :D You could have this as a side to chicken etc as well.

Yep, I keep it simple like that too.

I'll also add a little tomato puree, chopped tomatoes and a little bit of water.

You can do the same with quinoa.

For chick peas, red kidney beans & azuki beans I often blend them up into a paste (like hummus) then add to my gently stir-fired onions, greens, spices etc. Some of the azuki bean "brands" are 20g of protein per 100g!

Tarka Dhal? Awesome indian lentil dish. I've used this recipe before and it tasted pretty damn good, but I'm sure there are some better ones out there.

Scott and Ader...definitely like those ideas. Why do I never think of that for beans?! Must try it.

When you mix/purée them up they become in effect just a sauce (albeit a thick one). So no need to buy any tinned/jarred sauces ;)

A little tip: chuck in some spinach when it being blended/mixed. That'll up the greens intake of the meal and you'll not even notice it!

I'm getting hungry now!! :D I am going to start doing that with spinach now I have noticed you really can't taste it when its blitzed up.
