Chocolate Truffles

If you're into rich chocolate and want a source big calories for a cheat day then these will be a sure fire hit.

You will need:

100g Dark Chocolate 70% Cocoa or higher
100g Clotted Cream
Tablespoon Greek Yogurt
Pinch of Salt
Splash of your favourite spirit
Cocoa Powder

How to make:

Break up your Chocolate into small pieces and place in a bowl.

Gently heat up Clotted Cream in a saucepan until you start to see small bubbles appear around the edges at which point add in the Greek Yogurt and continue to stir until mixed in.

Once the small bubbles appear again pour the mixture over the Chocolate and slowly stir in until the Chocolate has melted in.

Add Salt and stir.

Add in your chosen spirit. The amount depends on taste but it will get more pronounced as once the mixture is cool.

Once the spirit is stirred in place the bowl in the fridge and allow to set anything from 2 hours to over night.

To make the Truffles sift some of the Cocoa Powder onto a plate. Then take a Teaspoon and scoop out a spoonful of the mix, shape into a rought ball and roll in the Cocoa Powder and place in a container or eat. The less you handle the easier it'll be to make each Truffle.
